Ingredients

We haven't seen the white cabbage for a month or two but it's reappearance this week is great for slaw.

This Asian-inspired slaw is super exotic and tasty. I had it with a salad and jacket spuds mashed with sautéed Portobello mushrooms also from your veg box.

You will need:
🔸1 bunch of spring onions/red onion
🔸4 medium carrots, peeled
🔸1 small white cabbage

For the dressing:
🔹2 tablespoons of soya sauce
🔹1 tablespoon of clear honey
🔹1 garlic clove, finely chopped
🔹1 tablespoon of finely chopped ginger
🔹2 tablespoons of white wine vinegar or rice vinegar
🔹2 tablespoons of toasted sesame oil
🔹2 tablespoons olive oil

Optional coriander roughly torn and lime juice (I didn't use these as I didn't have them in😊)

Directions

To make the Asian-inspired slaw simply... 🥕Grate the carrot, chop the onions and shred the cabbage as finely as possible and add to a bowl. 🥕For the dressing combine all the ingredients together and whisk. Make sure the honey has dissolved. 🥕Pour the dressing over the veg and toss thoroughly. Leave for 10-20 minutes to soften. 🥕 Serve the coleslaw with a sprinkle of coriander and a squeeze of lime juice (optional)
